This honestly could not be simpler...And feel free to add your own "Spag" touches! This recipe is just so easy, simple and utterly delicious.
1 onion, chopped
2 cloves of garlic, chopped
2 tins of organic chopped tomatoes
2 tbsp organic tomato paste
1 can organic lentils
2 cups mushrooms, halved.
1/2 cup basil
Few stalks of Rosemary
Salt and Pepper
Grape seed Oil (you can use Olive Oil)
Your own packet of wholemeal pasta/spaghetti (I love spelt)
Put your water on to boil and when it's happily simmering away - add your pasta. Cook until ready.
In a nice large frying pan or even a wok, put about a few tablespoons of grape seed oil on medium heat and then add your chopped onion and garlic. Toss around with a wooden spoon until nice and browned. Add the mushrooms and again- toss until they have some colour. (try not to pass out from the amazing smell).
Carefully add the organic chopped tomatoes and leave it all to simmer for a moment. Add the tomato paste, lentils, salt, pepper and SOME of your basil and rosemary and leave to simmer again (basically the longer these flavours have to sit together: the more delicious it will be!)
Meanwhile, put your pine nuts in a little pan and let them get some heat until nice and browned. Taste your sauce and see if it needs more salt/pepper/herbs. This is to your liking! If you feel devilish - sometimes I add a tablespoon of Vegan Butter! It just brings things together nicely for some reason.
To assemble: lay out your pasta in a lovely bowl and top it off with a generous dousing of sauce. Sprinkle on your pine nuts and the last herbs to finish off! I always like to serve with a lovely slice of bread (as you can see!)
