Serves 2 people)
Loaf of fresh Sourdough Bread
1 Avocado, flanned
1 tin of organic baked beans
1 packet of white mushrooms
2 cups of spinach
Salt and pepper
Prepare your potato by chopping into bite-sized pieces. Drizzle with Olive Oil, rosemary, salt and pepper. Oven roast until crispy!
In a frying pan, sautee your mushrooms in a tablespoon of Olive Oil until cooked through. Take them off the heat and add the spinach. Set aside.
In a small saucepan, heat up your baked beans on a low heat, stirring often so it doesn't stick to the pan.
On a plate - put out your avocado, a small bowl for your beans and your toasted sourdough. When your mushrooms/spinach and potatoes are ready, add them and your breakfast is ready!
Serve with fresh OJ or a lovely cup of fresh ground coffee!
**Sneaky NAUGHTY hint*** If you are in no way health-focused, you can make fried bread. Yes. I said fried bread! All this involves is heating up a scary amount of oil in a frying pan, wait until it's gently boiling and then add your slice of sourdough. Literally only have it in for a minute, then turn over. It should be lovely and brown. Not healthy. Utterly DELICIOUS.
