This is ideal for parties! Convert your friends with delicious easy platters :)
You'll need: (make enough for a nice grazing platter)
1 head Broccoli
4 raw Carrots
4 stalks Celery
2 cups of halved button mushrooms (more if you like 'em!)
2 stalks chopped Asparagus
Large bunch Spinach
5 large Tomatoes
1/2 cup Basil
1 large Sweet Potato
Tahini (for serving, enough to put in a dish)
Grape seed oil
A loaf of amazing bread (wholemeal, sourdough or grainy OF COURSE!
Part 1: The Raw Veggies
Chop nice hunks of carrot and celery to have to dip into your avocado and tahini. Lovely mid-munch snacks!
Part 2: The Sweet Potato Chips
Cut your sweet potato into delicious chip-sized hunks (like seen above) and oven roast with Grape-seed oil, rosemary and salt. This will take about half an hour in a 180 degree oven. Keep checking and remove when crisp and delicious! Put them high in the oven for ultimate crisp factor.
Part 3: Broccoli and Sweet Corn
As simple as it sounds. Steam some damn Broccoli (so it's still crunchy!) and when it's cooked, toss it with some delicious cooked sweet corn. Simple and ridiculously tasty. Put some salt on if you can't handle the tastiness of simplicity ;)
Part 4: Mushrooms, Spinach, Asparagus and Pine nuts
Sautee your mushrooms and asparagus in Grape-seed oil, rosemary, salt and pepper until they are perfect. When they are as you like, turn off the heat and add the spinach and pinenuts. Transfer into a serving bowl for your platter. Without added heat, the spinach should go perfectly "cooked", but not so wilted that you don't know it's there!
Part 5: The Bruschetta! My favourite.
This is something I've made for YEARS, even before I was a Vegan. It's truly simple and delicious.
Slice some of your bread and pop under the grill to toast.
In a bowl, dice up your tomatoes so they are small and look like a "bruschetta mix". Drizzle on the olive oil, salt, pepper and add the basil. Mix this all around and season to taste.
When your bread is toasted: rub some garlic on the bread and drizzle some Olive Oil.
Tip your Bruschetta mix on top and SERVE! So simple. So amazing.
Part 6: The Dippers!
Put some tahini in a serving dish. Done.
Grab an avocado. Halve it. Mush it all into a serving bowl with a fork. Add salt and pepper if you wish. Done.
Put your platter together! Wow your friends, your body and your heart. :)
