So cheap. So simple. Too divine.
1 Sweet Potato
2 cups of spinach
I cup cherry tomatoes
Salt and Pepper
Prepare your sweet potato by simply chopping it roughly, skin on, drizzle with a tiny bit of olive oil (you do not need much), salt and pepper.
Add the rosemary on top and oven roast until crispy and cooked through.
Depending on your oven this shouldn't take longer than 40 minutes.
Wash your greens and place them in a lovely salad bowl with the tomatoes and cucumber. You can obviously add any other veggies you desire - but I like this one nice and simple!
Top off with the Sweet Potato and devour. This goes amazingly with a dollop of Hummus and can be arranged in a million different ways :)
