This is for the gourmet raw foodies out there! It's not difficult at all, but involves owning a blender and a vegetable spiralizer (for the noodles.)
If you don't have a spiralizer, just chopping up the zucchini thinly or even grating it would still be delicious!
2 Large Zucchinis
2 cups Spinach
2 cups cherry tomatoes
1 stalk celery, chopped
Whatever other herbs you desire (I use rosemary and parsley)
1 tablespoon raw Tahini
Juice of 1 lemon
I start off by blending my sauce, so there's plenty of time to adjust the taste if you like.
Wash all your ingredients well.
Put the tomatoes, 1 cup of the spinach, basil, celery and tahini in your blender and let it whirl away! You want to mix it into a nice consistency. Taste as you go and add any more herbs or more tahini if you like. If you want to add salt and pepper, I have no issues with that at all!
For the noodles - simply spiralize your two zucchinis and heap them on top of your 2nd cup of spinach in a nice, BIG bowl.
Once you have your spinach and noodles in place, I squirt on some fresh lemon juice and then pour my sauce on top!

The picture below is nearly the same recipe - but with some key changes if you want something a bit different.
The sauce has more tomato and no tahini - so it's runnier and more of a traditional tomato and basil flavor.
The tahini I have made a separate sauce with - simply tahini, lemon juice and a bit of water - so it's almost like finishing off with cheese!
