I'm simultaneously proud and embarrassed to say that I whipped this out one night when I was too lazy to leave the house. Who knew I was about to create the most DELICIOUS MEAL EVER?! And you can eat as much of it as you want...till you burst...guilt free :)
4 Large Leaves Romaine Lettuce
4 medium sized tomatoes
1/2 an avocado
2 stalks celery
Yep. That's it. Gotta love easy, raw food.
Lay out your romaine leaves on a pretty chopping board (make sure they're washed and ready to go)
Chop up your tomatoes into little squares and mix them with the basil to let the flavors settle together. Chop your celery and avocado and lay aside.
First: lay the celery out on the leaves (this adds extra crunch and a bit of sweetness), then your bruschetta mix and finally lay out some sliced avocado on top. BLISS.
Below - a version adding tahini and some chopped cucumber. God I love tahini... maybe too much!
