I know, it's too simple to even call a "recipe", but it was so good that I'm including it anyway.
The key to this being amazing is buying a great bagel! If you have access to local markets or a good baker - now is the time to make friends.
1 Portobello Mushroom
1/2 an Avocado, sliced
Kale or Spinach leaves
1 Wholewheat or Spelt Bagel
Salt and Pepper
Halve your mushroom, place on a baking tray with a drizzle with a little olive oil, salt and pepper and place it into the oven on a medium heat for about fifteen minutes.
While your Mushroom is grilling - halve your bagel and pop it under the grill or into the toaster.
Drizzle with a bit of olive oil, then add sliced avocado, your greens and finish with the mushroom. YUM!
