This is a dish I make nearly every time I have guests over. It's easy, simple and so tasty! I used to work for two wonderful, talented Italians in their divine cafe haven and this was the most popular dish on the menu!
I could never believe how simple it was.
The key is having lovely, fresh ingredients. If your ingredients are quality - they will taste amazing.
2 large, ripe fresh tomatoes - diced
5 basil leaves
Generous drizzle of Olive Oil
1 clove garlic
Salt and Pepper
2 slices of thick, fresh bread (Sourdough is ideal)
Grill your slices of sourdough until it's perfectly brown to your liking :)
Meanwhile, in a bowl, place your diced tomatoes, a generous slosh of olive oil, the chopped basil, salt and pepper and combine. Taste as you go and add more seasoning if you like.
When your bread is toasted - brush the garlic across it generously and add a drizzle of olive oil.
Top with your tomato mixture! I promise - this simple recipe is so divine. I've made it so many times and it's always a huge hit!
