This is a seriously delicious muffin recipe that you can feel good about. I use all natural, organic ingredients and they’re vegan…. obviously.
2 cups Wholemeal self-raising flour
½ cup Organic rolled Oats
½ cup LSA mix (Linseed, Sunflower seed, Almond)
1 tbsp. Vegan butter
½ cup Organic Soy Milk
3 Mashed Bananas
250 mls Agave Nectar Pre-heat the oven at 180 degrees.
Combine all dry ingredients together in one bowl. Mash the bananas separately and then slowly fold the bananas and wet ingredients all together with the flour etc.
Make sure you combine the mixture well; it should be sloppy, but hold its shape. If it’s too wet, add in some more flour and vice versa if it’s too dry; add some soy milk.
Bake in the oven at for 30 minutes. Check with a skewer, if it doesn’t come out clean, chuck back in for another few minutes.
