I can hear your cynicism....what makes this salad "super"? Well, just calm down and I'll tell you.
Firstly, it's delicious. Always a plus. Secondly it's fast and easy to make. Thirdly, it has a few secret touches that make people go: "oh, this is not JUST a salad, this is bloody delicious and I can't figure out EXACTLY what you did to make that taste so damn good."
I love having a salad like this on the table when guests are over as a nice accompaniment to the main meal. It goes with anything and is SO GOOD FOR YOU.
Or, you can just eat it as your dinner. Either way, you're a superhero. Eating a super salad. Sound good?
(Enough for a giant serving and leftovers!)
1 tin Drained chick-peas
1 Tbsp Olive Oil
1/2 cup Almonds
1 head Romaine Lettuce
4 ripe, lovely tomatoes, chopped
1/2 a Cucumber, chopped into cubes
2 springs Rosemary
Begin by cooking your chick peas! This can be done either in a saucepan (carefully) or in the microwave. You can probably guess I will recommend doing it on the stove, but you need to keep a close eye on them and they don't take long. Just keep the heat low and make sure they don't boil.
Or, you can be a ninja, buy your chick peas totally dry and do the "overnight soak".
Once your chick peas are cooked, set them aside in a bowl with the olive oil, rosemary and a few pinches of sea salt.
Put your almonds in the oven on a baking tray at a medium temperature. Let them cook for around 10 - 15 minutes, or until they have a nice, toasting smell.
Now - you can prep the lovely, raw vegetables! Wash and chop up your lettuce and place it in your serving bowl. Follow with the tomatoes, cucumber and avocado.
Add the marinated chick-peas and your toasted almonds and wriggle the entire thing around so that all the ingredients are visible. Maybe make sure there's lots of yummy avocado on top ;) People love avocado.
Finish off with a squeeze of fresh lemon juice and a final sprinkle of sea salt.
Serve and DEVOUR!
Optional: make a yummy Tahini Dressing to go with it? I don't feel this salad needs a dressing as it's already quite flavourful, but if you want to super impress some guests - mix together two tablespoons of tahini, the juice of one lemon and some water in a bowl. Mix it around consistently until it is nice and smooth :)
